He goes to the market to purchase fastidious food ingredients everyday for his cuisine.
He purchase not only local fresh ingredients such as fish from Amakusa but also delicious ingredients all over Japan.
Cuisine using seasonal ingredients are enough to pull out the taste of the material and fits to drink.
You can enjoy not only the Sashimi using fresh wild fish, such as flounder and yellowtail, but also fat mackerel from Manshu Island with sesame , Sashimi, or Vinegared.
You can also enjoy the Kumamoto local cuisine, horse sashimi, scorched horse streaks, horse stew and handmade Mustard-stuffed Lotus Root.
Chef usually makes Japanese food but occasionally makes Western food such as beef stew and spam salad. As you can see, Chef does not restricted by Japanese food if something delicious.
